History, family tradition, and luxurious hospitality define Gervasi Vineyard Resort & Spa in Canton, Ohio. In the spring of 2010, owner Ted Swaldo — inspired by his grandmother’s Italian culture (Gervasi is her maiden name) — opened his Tuscan dream, just a year after retiring as CEO of ASC Industries, Inc. When the Swaldo family first purchased the property in 2009, it was an overgrown former tree farm. Extensive land clearing was necessary; however, the family replanted every tree that had to be moved for construction or vineyard planting. Many of the farm’s former buildings were also restored, including the original farmhouse that dates to the early 1800s. “The beautiful 2,200-square-foot structure has all the charm of an early 19th-century home combined with updated features and modern conveniences,” says Andrea Hartman, Marketing Director at Gervasi Vineyard. “Even the original milk house was reclaimed, moved, and now serves as an outdoor kitchen for The Piazza seasonal patio.”

The original barn was also remodeled and repurposed. “Built in the late 1820s, [the barn] is now home to The Bistro, an upscale Italian restaurant with a cozy lodge-like feel. The building was painstakingly renovated, and much of the wood that had to be removed was reused elsewhere on the property. Some of the materials were repurposed to create a ‘tavola lunga’ (Italian for ‘long table’) and the wine tasting bar. The original wooden ceiling beams were honed from trees grown on the property,” Hartman says.
